A happy cake for a Happy Birthday. Pointillism defines the design effect, topped off with an edible wafer paper 'party streamer' quill.
Layers of primary colours and paler shades, all mixed from natural pigments are 'spotted' onto the cake methodically with a paint brush, building up to become a colourful medley and its own unique design.
Bespoke wedding cake of three tiers which were handed painted with natural pigments of pea flower blue, sage and cornflower tones. Stylised with chosen details from my clients which in turn compliment their wedding decorations and venue aesthetics.
Edible garnishes of hand steamed wafer paper brushed with blue pea flower powder to highlight the edges. Edible viola flowers, silver leaf and vegan pinhead pearls.
August and mid summer edible florals in hues of pink, green and husky blue. These blooms compliment the same tones made from natural pigments in the cakes ganache'd exterior. The finished design became a romantic bespoke wedding cake. Inside however, there is a zesty floral party going on with a lemon elderflower sponge, homemade zingy lemon curd, vanilla Swiss meringue buttercream and elderflower syrup.
A closer look at the stunning organic and edible / food safe flowers for a mid August wedding. As requested by my client - pink, husky blue and green are highlighted through the following:- veronica, rose, dahlia, pea sprigs, peppermint, dill flower, fennel frond, cornflower, nigella flower and yarrow. All totally natural and pesticide free.
Purple, pink and green for a clients mums 80th birthday, without it screaming 80! I was asked for a subtle celebration cake in natural pigment tones mentioned above, with the addition of a natural posey of purple and pink edible / food safe flowers. This is one of the styles I can produce, due to a healthy supply of organic edibles in my garden. Seasons depending, but from spring to late summer our flowers and herbs are plentiful.
Purple and pink florals steal the show with this cake and its edible garnish of seasonal (August) organic flowers and herbs. Amaranth, veronica, purple thistle, aubergine flower, pea fronds, nasturtium leaves, purple basil, pink rose, thyme, straw flower, physalis. Natural and pesticide free.
A clients brief which I thoroughly enjoyed, symbolising Japan and Scotland coming together with Japanese blossom and the Scottish thistle for the bride and groom. What you can't see is the decadent Devil's Food Cake filled with a dark chocolate crémeux. A small delicate cake that packs a punch with its chocolate flavour!
A face forward cake finished with a white ganache, then painted with natural pigments as a water colours blending and dripping down the face of the cake. Hand made wafer paper branches, blossom, Scottish thistles and quills build up as a final delicate flourish.
Three staggered tiers of three different flavoured sponges (top = vegan/bergamot, middle = lavender and blackberry, bottom = black sesame, tahini & orange, chocolate crémeux). Organic edible flowers and herbs (rose, lavender, bergamot, fennel, viola, catmint, mint, thyme, marjoram, pea, carnation).
Before I finished decorating this cake with edible organic blooms at the venue, I set it up in the studio for a quick photo shoot. Its offset shape displays elegance whilst the colour tones from natural pigment of blues, greens and purples compliment the natural flowers.
This delicate vegan wedding cake bloomed from blossom. My clients asked me for 'a touch of blossom on a simple backdrop'. The abstract flowers and branches are hand crafted from wafer paper and dusted with natural pigments. All edible, no wires!
A closer look at the organic finish on the cake, as vanilla bean is blended through the plant based 'white chocolate' ganache. Stencil work adds a touch of detail and depth to the cream colour finish of the cake.
A duo of cakes for a June wedding, the smaller one is made of plant based ingredients flavoured with elderflower and lemon curd. The two tiered cake has a G & T tier at the top, with the bottom tier of lime, cardamom and coconut. This design was created with input from the bride and groom after their consultation with me. Natural, organic, simplicity with elegance.

Cosmic! My client's brief for her mums 70th birthday cake was to fall in line with the '1960's hippy' garden party that they were throwing as a surprise. The tall bespoke cake is painted with fuchsia pink and cornflower blue natural pigments, with the addition of abstract 'daisy like' flowers for a swinging June hippy party.

Wafer paper daisies, blue and pink, dried edible daisies and natural pigment colours blended to set off the cosmic 1960's summer time vibe.

My client asked for a cake design which matched her mothers pink sapphire engagement ring. Et voila...natural pigments of pink rose petal and hibiscus powders on a soft white ganache, edible 24ca gold for a celebratory touch. Hand made abstract wafer paper flowers as a final flourish.
A 70th birthday cake that doesn't scream 70 yrs! My client asked for a unique cake as a surprise for his wife, with warm autumnal colours and left me free to be creative. Natural pigments of green, yellow, orange and red were used for the autumnal colours, decorated with celebratory gold leaf, gold tempered chocolate shards and coloured wafer paper designs.

Happy 50th, a ray of sunshine for November! My clients brief was Gin & Tonic flavoured sponges, smbc and lime curd. Decoration was left to me and my imagination, but to include the colour cerise.....et voila!

An abstract yet romantic plant based 'vegan' wedding cake. Victoria sponge, vanilla bean buttercream, organic strawberry compote made from the berries of a plentiful harvest here in my garden. Finished with edible wafer paper flower and leaf designs to compliment the couples wedding table stationary.
A closer look at these 'abstract' hand made wafer paper flowers which were on theme to complement the wedding table place settings. Using natural pigment colours of fuchsia, beetroot powder and pea flower powder, to layer up the colours resulting in the desired tones of wine red and charcoal blue colour.

A clients request for a 'one off' 80th birthday cake for his wife of a 'jumping salmon' as per a glass vase they have at home. My inspiration came from the translucency of the glass and the bubbles within the glass vase thus depicting the colours white and silver for the bespoke cake design.
Working with the edible elements of wafer paper and rice paper I created intricate details for the cake design.
As you can see, I had fun with this design of 'triathlon' (swimming, running, cycling) as requested by my client for their brother's surprise 40th birthday. All natural pigments for colour and edible wafer paper sun kissed clouds on the top.
My client asked for a 'triathlon' 40th birthday cake....so I went down the P O P A R T idea. Handmade stencils to then paint the figures in black onto the iced cake, finished with a touch of colour and wafer paper garnish.
Naked and Natural for a July anniversary cake. Coconut, lime and cardamom sponges, sitting happily together with a lime SMBC. A 'naked' finish from a skim coat of white chocolate ganache.
Organic, fresh and edible July flowers and aromatics. Pops of colour from nasturtium flowers and leaves, pea / fennel flowers and fronds, thyme, marjoram, hue of blue from fresh borage flowers and amaranth flowers stretching delicately down the cake.

Red and Gold the colours of the brides dress. By blending natural pigments of yellow and fuchsia I achieved this stunning deep plush red, finished with a touch of gold stencil work, gold leaf and edible wafer paper handcrafted orchids.
A 50th birthday in the sunny month of June. Shades of navy blue to turquoise with the application of natural pigments and gold shimmer for that extra special effect. All masking inside the moist chocolate fudge cake, kirsch cherry compote and vanilla SMBC.
The white chocolate SMBC ganache is coloured slightly with blue pigment, to give a cool yet softer look. Dotted stencil work adds texture, tempered white and dark chocolate dusted with edible powders in shades of blue, turquoise and gold create the final 'wow factor' to this bespoke cake.

'Pina Colada' birthday cake. Flavoured with rum, coconut, pineapple. Decorated with all edible garnishes of dried pineapple flowers, lightly toasted coconut, wafer paper umbrellas, straws and billowing cloudy froth.

My client asked for a birthday cake to surprise his wife with the design of 'long tailed tits', that frequent their garden. Keeping my design style in check I had the pleasure of adding these three little chaps (chap-esses?)
I painted the cake cylinder with natural pigments of lemon peel powder and marigold powder, then began sculpting the 'long tailed tits' from white chocolate ganache, painted with rose and hibiscus powder for that pink blush. Finally the long tailed tits are sitting on branches, leaves and flowers made from wafer paper. It was a real pleasure creating this cake.
A small bespoke wedding cake, following a client's brief of 'Royal Blue with a simple yet elegant sage colour garnish'.
A fat free and gluten free sponge, as requested for health issues (rather than allergen issues), sandwiched together with a vegan (fat free) lemon curd and a juicy compote of blackcurrants grown organically in our garden. Finished with natural blue pigments and soft sage edible wafer paper quills.

My client's brief was 'camping car, travel, colours blue and purple, sunshine'. So my imagination got to work and full-filled their brief.
A chocolate and stout cake paves the way for the journey in a camper van. All edible garnishes starting with sunshine in the form of an organically grown sunflower, wafer paper clouds, butterflies and flowers, pressed edible violas and primrose, natural pigment paints.
Bass Playing Bass - commissioned for a young man's surprise 21st birthday party. My client's brief was "his hobbies are fishing and playing bass guitar"....therefore it was obvious to me that the following bespoke cake was to be created.

Inside is a delicious Victoria sponge with added vanilla bean, Swiss meringue buttercream, strawberry compote. The exterior has my signature ganache painted with natural food pigment powders for a bespoke design of 'Bass Playing Bass'.
